What Is Elephant Garlic Scape?
Elephant garlic scape is the tender flowering stalk of the elephant garlic plant, harvested just before it blooms. Its cloves are enormous—hence the name “elephant” and its flavour is milder, sweeter, and far less pungent than traditional garlic.
In late spring to early summer, the plant sends up a thick, curling stalk called a scape. This is part of its natural reproductive cycle, but when harvested young, the scape is crisp, edible, and full of flavour—somewhere between green garlic, young leek, and wild spring onion.
